Curd Dessert with Roasted Oatmeal

Ingredients

  • 200 ml heavy cream
  • 3 tbsp sugar
  • 1 tsp vanilla sugar
  • 400 g curd paste (kohupiimapasta)
  • 3 tbsp roasted barley flour (kama)
  • 1 tsp freshly squeezed lemon juice

Creamy Cottage Cheese Dessert Instructions:

  1. Whip the heavy cream with sugar and vanilla sugar
  2. Mix in the curd paste and roasted barley flour (kama) gradually while stirring
  3. Sprinkle some lemon juice over the barley mixture for enhanced flavor
  4. Divide the mixture into serving dishes and serve

Roasted Oatmeal Ingredients

  • 100 g oatmeal
  • 1-2 tbsp butter
  • 1-2 tbsp sugar

Roasted Oatmeal Instructions:

  1. Heat a pan over medium heat, add rolled oats and butter, and toast for about 5 minutes, stirring constantly, until the oats turn golden brown. Stir in sugar and cook for a few more minutes. Remove the pan from heat and let it cool.

"American-style" Fluffy Pancakes

Fluffy Pancakes Ingredients

  • ~3/4 pack (about 180–200 ml) cultured buttermilk (pett) or 200 ml buttermilk/kefir
  • 3 eggs
  • 2 tbsp sugar (reduce if using tart berries)
  • a pinch of vanilla sugar or 1 tsp vanilla extract
  • flour (add until batter reaches consistency described below)
  • 3/4 tsp baking soda
  • butter for frying

Fluffy Pancake Instructions:

  1. Whisk eggs with sugar and vanilla until slightly frothy.
  2. Stir in the buttermilk/kefir.
  3. Gradually add flour while mixing until the batter is slightly thicker than sour cream (about 20% thicker).
  4. Add the baking soda last, stir briefly, then let the batter rest for about 10 minutes.
  5. Heat a pan to medium; it should not be too hot. Add a knob of butter.
  6. Pour roughly 3/4 cup (or a large ladle) of batter per pancake and cook until bubbles form, then flip and finish cooking.

Serving suggestions: top with jam, salted caramel, curd, or ice cream. Fresh or frozen berries (e.g., blueberries) or chocolate chips can be added to the batter - reduce sugar when using tart fruit. A cinnamon-sugar mix is also excellent.
